With the weather changing to cool fall temps in the NW it makes me want to bake and get out the crock pot. This weekend I tried out a friend's recipe for Spice Muffins - delicious and simple!
This is actually my favorite time of year - mostly because of the color changes and the crisp days. But I am a little behind in getting ready for cooler weather. The outdoor cushions still need to be washed off and brought in and I need to start packing up my summer clothes and bring out my winter clothes.
What do you do to welcome the fall season in? To get you started here is the recipe for Spice Muffins:
- 1 box of cake mix ( I use the yellow mix)
- 2 tbl of flour
- 1 tsp of baking powder
- 3 eggs
- 2/3 cup of milk
- 1/3 vegetable oil
Mix all the ingredients together. Spoon into muffin cups sprinkle cinnamon/sugar mixture on top. I use the cinnamon spice blend from Pampered Chef. Bake at 375 degrees for 20 minutes or until tops are lightly browned. I sprinkle more of the cinnamon/sugar mixture on top before they totally cool.
